Okra and Courgette Stir-Fry
Ingredients:
- 200g okra, washed and trimmed
- 2 medium courgettes (zucchini), sliced
- 2 cloves garlic, minced
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon honey or maple syrup
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Optional: chili flakes for heat
- Cooked rice or noodles for serving
Instructions:

Heat olive oil in a large skillet or wok over medium-high heat.

Add the minced garlic and sliced onion to the skillet and sauté for 2-3 minutes until fragrant and slightly softened.

Add the sliced courgettes (zucchini) and red bell pepper to the skillet. Cook for 3-4 minutes until they start to soften but are still slightly crisp.

Meanwhile, prepare the okra by cutting them into bite-sized pieces.

Add the okra to the skillet and cook for an additional 3-4 minutes, stirring frequently, until all the vegetables are tender but still vibrant in color.

In a small bowl, whisk together the soy sauce, rice vinegar, honey or maple syrup, sesame oil, and optional chili flakes.

Pour the sauce over the vegetables in the skillet and toss everything together until evenly coated. Cook for another 1-2 minutes to allow the flavors to meld.

Taste and adjust seasoning with salt and pepper if needed.

Remove from heat and serve the stir-fry hot over cooked rice or noodles.
